Probably the reason for being on liquids for two weeks is to help get rid of some of the fat in your liver. When they do the surgery, they have to retract ("move out of the way") the liver. The bigger and fattier your liver is, the more retraction they need to do. Makes the job a bit more difficult for the surgeon but nothing they can’t work around. But, if they have to move things around more, you might have more discomfort after surgery. It’s not that your gut needs to be cleaned out or anything like that, since they are only working on the upper part of your gastrointestinal system.
